The Riva introduces Jakarta to experimental cuisine

The term of molecular cuisine for food lovers in Jakarta maybe still something new, the cuisine which added principles of chemistry and physics now for the first time would be featured at Riva restaurant, Lobby The Park Lane Hotel from November 30 until December 8 2007.

The cuisine would be serve by two young French chef Laurent Bellisa and Guillaume Trouilott, both are Chef Owner of L’Aubergine Restaurant in Switzerland who invited by Riva Master Chef, Gilles Marx to promote this kind of experimental cuisine.

Chef Laurent said molecular cuisine basically refers to the use of recent technology discoveries and to create new, usual recipes and dishes, kind of fusion and during the promo, we will do something unthinkable such as practice modern cuisine, balancing tradition, innovation and touch of molecular while at the same time respecting the taste of the dish.  

Two Chef would present a set menu, consist of seven dishes start with chocolate duck foie gras cubes with cocoa cotton candy, French natural oyster and green lime pearls, Red mullet fillet black olive oil garlic scented parsley shampoo, the dragon effect, fresh scallop timbale with minute potato puff, oven roasted veal rack cumin flavored carrot puree orange cloud, fresh mango meringue at -196°C with pineapple salad, The set menu price are Rp 1,000,000,++

In general, the menu serve with molecular cuisine touch at Riva were blend of the strange and the common and still others tasted like nothing we had ever tried before.

Riva restaurant provide 74 seat, open for lunch from 11.30 am till 2.30 pm and for dinner from 6 pm till 11 pm, but closed for lunch on Saturday and Sunday.
